Description

Ingredients

  • 2 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced red onion
  • 1/2 teaspoon garlic powder
  • 4 medium flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add red onion and sauté for 2 minutes.
  3. Add spinach and garlic powder, cook until spinach wilts.
  4. Remove from heat and mix in feta cheese.
  5. Spread the mixture evenly on half of each tortilla.
  6. Fold the tortillas in half.
  7. Cook each quesadilla in a pan for 2-3 minutes per side until golden brown.
  8. Cut into wedges and serve.
