Ingredients

- 2 cups fresh spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup diced red onion
- 1/2 teaspoon garlic powder
- 4 medium flour tortillas
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add red onion and sauté for 2 minutes.
- Add spinach and garlic powder, cook until spinach wilts.
- Remove from heat and mix in feta cheese.
- Spread the mixture evenly on half of each tortilla.
- Fold the tortillas in half.
- Cook each quesadilla in a pan for 2-3 minutes per side until golden brown.
- Cut into wedges and serve.
Notes
- Use whole wheat tortillas for a healthier option.
- Add a pinch of chili flakes for extra spice.
- Serve with sour cream or salsa if desired.
