  • 1 cup milk
  • 2 eggs

  • 2 cups, chopped fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup, grated Parmesan cheese
  • 2 cloves, minced garlic
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, salt, and melted butter until smooth. Let the batter rest for 30 minutes.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, combine the sautéed spinach with ricotta cheese, Parmesan cheese, and black pepper. Mix well.
  5. Heat a non-stick skillet over medium heat. Pour in a ladle of crepe batter, tilting the pan to spread it evenly. Cook for about 1-2 minutes on each side until lightly golden.
  6. Remove the crepe and fill it with the spinach mixture. Roll or fold the crepe and keep warm.
