- 1 cup all-purpose flour
- 1 cup milk
- 2 eggs
- 1/4 teaspoon salt
- 2 tablespoons, melted butter
- 2 cups, chopped fresh spinach
- 1 cup ricotta cheese
- 1/2 cup, grated Parmesan cheese
- 2 cloves, minced garlic
- 1 tablespoon olive oil

Instructions
- In a mixing bowl, whisk together the flour, milk, eggs, salt, and melted butter until smooth. Let the batter rest for 30 minutes.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the sautéed spinach with ricotta cheese, Parmesan cheese, and black pepper. Mix well.
- Heat a non-stick skillet over medium heat. Pour in a ladle of crepe batter, tilting the pan to spread it evenly. Cook for about 1-2 minutes on each side until lightly golden.
- Remove the crepe and fill it with the spinach mixture. Roll or fold the crepe and keep warm.
- Repeat the process until all batter and filling are used. Serve warm.
Notes
- You can add herbs like dill or basil to the filling for extra flavor.
- These crepes can be made ahead of time and reheated in a skillet or microwave.
