Description
A fresh spinach pasta salad with feta cheese and cranberries.
Ingredients

- 8 oz pasta
- 4 cups fresh spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta according to package instructions.
- Drain pasta and let it cool.
- In a large bowl, combine pasta, spinach, feta, and cranberries.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper.
- Toss gently to combine.
- Serve chilled.
Notes
- Use whole wheat pasta for extra fiber.
- Add nuts for crunch if desired.
- Store leftovers in the fridge for up to 2 days.
