- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, mix together chopped spinach, cream cheese, mozzarella, parmesan, minced garlic, Italian seasoning, salt, and pepper until well combined.
- Using a sharp knife, make a pocket in each chicken breast by slicing it horizontally without cutting all the way through.
- Stuff each chicken breast with the spinach mixture, securing with toothpicks if necessary.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from oven, let rest for a few minutes, then serve.
