Ingredients

- 1 lb of asparagus
- 2 cups of cherry tomatoes
- 1 lb of chicken breast
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 cup of quinoa
- 2 cups of vegetable broth
Instructions
- Preheat oven to 400°F (200°C).
- Rinse quinoa and combine with vegetable broth in a pot. Bring to a boil and then simmer for 15 minutes.
- On a baking sheet, toss asparagus and cherry tomatoes with olive oil, garlic powder, salt, and pepper.
- Place chicken breast on the baking sheet with vegetables.
- Bake for 20-25 minutes or until chicken is cooked through.
- Serve chicken and vegetables over quinoa.

- Feel free to add your favorite herbs.
- Use leftover chicken for salads.
