Description
A simple and fresh spring mix salad recipe.
Ingredients

- 4 cups spring mix greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine spring mix, cherry tomatoes, cucumber, and red onion.
- Add feta cheese and walnuts on top.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over the salad and toss gently to combine.
- Serve immediately.
