Ingredients

  • 4 cups fresh or frozen peas
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup fresh mint leaves
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Lemon wedges for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the peas and vegetable broth to the pot. Bring to a boil, then reduce to a simmer for 10 minutes.
  4. Stir in the fresh mint leaves and cook for an additional 2 minutes.
  5. Remove the pot from heat and let it cool slightly.
  6. Using an immersion blender or a regular blender, puree the soup until smooth.
  7. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste.
  8. Heat the soup gently before serving, but do not boil.
  9. Serve hot, garnished with lemon wedges.
