- 4 cups fresh or frozen peas
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup fresh mint leaves
- 1 cup heavy cream
- Salt and pepper to taste
- Lemon wedges for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the peas and vegetable broth to the pot. Bring to a boil, then reduce to a simmer for 10 minutes.
- Stir in the fresh mint leaves and cook for an additional 2 minutes.
- Remove the pot from heat and let it cool slightly.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste.
- Heat the soup gently before serving, but do not boil.
- Serve hot, garnished with lemon wedges.
