Description

Ingredients

  • Rice paper wrappers – 10 sheets
  • Carrots, julienned – 1 cup
  • Cucumber, julienned – 1 cup
  • Bell pepper, thinly sliced – 1 cup
  • Avocado, sliced – 1
  • Mint leaves – 1/2 cup
  • Cilantro – 1/2 cup
  • Rice vermicelli – 1 cup, cooked
  • Peanut sauce – for dipping

Instructions

  1. Prepare all the vegetables and herbs.
  2. Soak the rice paper wrappers in warm water until soft.
  3. Place a wrapper on a flat surface.
  4. Add a small amount of each filling in the center.
  5. Fold the sides of the wrapper over the filling.
  6. Roll it tightly from the bottom to the top.
  7. Repeat with remaining wrappers and fillings.
  8. Serve with peanut sauce.

Notes

  • Keep the spring rolls covered with a damp cloth to prevent drying.
