Description
Crispy and fresh spring rolls filled with vegetables and served with a dipping sauce.
Ingredients
- Rice paper wrappers – 10 sheets
- Carrots, julienned – 1 cup
- Cucumber, julienned – 1 cup
- Bell pepper, thinly sliced – 1 cup
- Avocado, sliced – 1
- Mint leaves – 1/2 cup
- Cilantro – 1/2 cup
- Rice vermicelli – 1 cup, cooked
- Peanut sauce – for dipping
Instructions
- Prepare all the vegetables and herbs.
- Soak the rice paper wrappers in warm water until soft.
- Place a wrapper on a flat surface.
- Add a small amount of each filling in the center.
- Fold the sides of the wrapper over the filling.
- Roll it tightly from the bottom to the top.
- Repeat with remaining wrappers and fillings.
- Serve with peanut sauce.
Notes
- Keep the spring rolls covered with a damp cloth to prevent drying.
- You can add protein like shrimp or tofu if you prefer.
