  • 1 cup shredded lettuce
  • 1 cup grated carrots
  • 1 cup cucumber, julienned
  • 1 avocado, sliced
  • 1 cup cooked shrimp, halved (optional)
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup soy sauce (for dipping)

Instructions

  1. Prepare all your ingredients and set them aside.
  2. Fill a shallow dish with warm water.
  3. Soak one rice paper wrapper in the warm water for about 10 seconds until it becomes pliable.
  4. Lay the wrapper on a clean surface.
  5. In the center of the wrapper, layer shredded lettuce, carrots, cucumber, avocado, shrimp, mint, and cilantro.
  6. Fold the sides of the wrapper over the filling.
  7. Roll the wrapper tightly from the bottom to the top.
  8. Repeat with the remaining wrappers and filling.
  9. Serve with soy sauce for dipping.

Notes

  • Keep the rice paper wrappers covered with a damp cloth to prevent drying out.
  • You can add other ingredients like bell peppers or tofu for variety.
