A simple and tasty recipe for tender corned beef cooked in a crockpot.
Ingredients

- 3–4 lbs corned beef brisket
- 4 cups water
- 1 onion, quartered
- 3 carrots, chopped
- 2 potatoes, quartered
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in the crockpot.
- Add water to cover the meat.
- Layer the onion, carrots, and potatoes on top.
- Sprinkle mustard seeds, peppercorns, and bay leaves.
- Cover and cook on low for 8-10 hours.
- Remove meat and let it rest before slicing.
Notes
- Adjust cooking time for larger or smaller cuts of meat.
- Serve with cabbage for a traditional meal.
- Store leftovers in the fridge for up to 3 days.
