- 4 cups Yellow squash
- 1 Onion
- 3 tablespoons Butter
- 2 Eggs
- 1 cup Cheddar cheese
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Cornbread mix
- 1/2 cup Milk
- 1/2 cup Bread crumbs
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, melt the butter and sauté the onion until translucent.
- Add the sliced squash and cook until just tender, about 5 minutes.
- In a large bowl, combine the cooked squash mixture, beaten eggs, cheddar cheese, salt, black pepper, cornbread mix, and milk. Mix until well combined.
- Pour the mixture into a greased baking dish.
- Sprinkle the bread crumbs evenly over the top.
- Bake for 30-35 minutes or until the top is golden brown and the casserole is set.
