Celebrate St. Patrick’s Day with these delicious mint chocolate chip cupcakes topped with a creamy mint frosting and festive green sprinkles!

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons peppermint extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 2–3 tablespoons milk
- 1 teaspoon peppermint extract
- Green food coloring
- Green sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, combine the egg, buttermilk, vegetable oil, and peppermint extract. Mix well.
- Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chocolate chips.
- Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
- For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and mix until combined.
- Add the milk, peppermint extract, and a few drops of green food coloring. Beat until fluffy and smooth.
- Frost the cooled cupcakes with the mint frosting and decorate with green sprinkles.

Notes
- For a richer chocolate flavor, use dark cocoa powder.
- Feel free to adjust the amount of peppermint extract to your taste.
