  • 1/2 cup vegetable oil
  • 2 teaspoons peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring
  • Green sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine the egg, buttermilk, vegetable oil, and peppermint extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  7. For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and mix until combined.
  8. Add the milk, peppermint extract, and a few drops of green food coloring. Beat until fluffy and smooth.
  9. Frost the cooled cupcakes with the mint frosting and decorate with green sprinkles.
