Ingredients

- 2 pounds of corned beef
- 1 head of cabbage, chopped
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, quartered
- 4 cups of beef broth
- 1 tablespoon of mustard seeds
- 1 tablespoon of black peppercorns
Instructions
- Rinse the corned beef under cold water.
- Place the beef in a large pot and add beef broth.
- Add mustard seeds and black peppercorns.
- Bring to a boil, then reduce to a simmer.
- Cook for 2.5 to 3 hours until tender.
- Add potatoes, carrots, and onion to the pot.
- Simmer for another 30 minutes.
- Add cabbage and cook for an additional 15 minutes.
- Slice the corned beef and serve with vegetables.
Notes
- Adjust cooking time based on beef size.
- Serve with traditional Irish soda bread.
- Leftovers can be used in sandwiches.
