Celebrate St. Patrick’s Day with traditional Irish dishes.
Ingredients

- 2 pounds corned beef
- 1 head cabbage, chopped
- 4 large carrots, sliced
- 4 large potatoes, quartered
- 1 tablespoon mustard
- 2 cups beef broth
Instructions
- Rinse the corned beef under cold water.
- Place corned beef in a large pot and cover with beef broth.
- Bring to a boil, then reduce heat and simmer for 2-3 hours.
- Add potatoes and carrots, cook for 20 minutes.
- Add cabbage and cook for another 10 minutes.
- Slice the corned beef and serve with vegetables.
Notes
- Serve with mustard on the side.
- Leftovers can be used for sandwiches.
