A festive dish perfect for St. Patrick’s Day celebrations.
Ingredients

- 1 lb corned beef
- 4 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cabbage, cut into wedges
- Spices: bay leaf, peppercorns, mustard seeds
Instructions
- Place corned beef in a pot with water and spices.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Add onion, carrots, and potatoes to the pot.
- Simmer for another 30 minutes.
- Add cabbage and cook for 15 more minutes.
- Remove from heat and let rest before slicing.
Notes
- Serve with mustard or horseradish.
- Leftovers can be used for sandwiches.
- Adjust vegetable quantities as desired.
