Celebrate St. Patrick’s Day with traditional Irish dishes.
Ingredients

- 2 lbs corned beef brisket
- 1 tbsp black peppercorns
- 1 tbsp mustard seeds
- 4 cups water
- 1 head of cabbage, chopped
- 4 large carrots, peeled and sliced
- 4 large potatoes, peeled and cubed
Instructions
- Rinse the corned beef under cold water.
- Place the beef in a large pot with peppercorns, mustard seeds, and water.
- Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours.
- Add potatoes and carrots to the pot.
- Simmer for an additional 20 minutes.
- Add cabbage and cook for another 15 minutes.
- Remove meat and vegetables, slice the beef, and serve.
Notes
- For extra flavor, add garlic and bay leaves to the pot.
- Serve with mustard or a creamy horseradish sauce.
