Ingredients

- 1 lb corned beef
- 4 cups water
- 1 onion, quartered
- 2 carrots, chopped
- 2 potatoes, chopped
- 1/2 head of cabbage, chopped
- 1 tablespoon mustard
- Salt and pepper to taste
Instructions
- In a large pot, combine corned beef, water, onion, and spices. Bring to a boil.
- Reduce heat and simmer for 2.5 hours.
- Add carrots and potatoes. Cook for 30 minutes.
- Add cabbage and cook for another 15 minutes.
- Remove meat and let it rest before slicing.
- Serve with vegetables on the side.
Notes
- For a richer flavor, add garlic.
- Leftovers can be used in sandwiches.
