A festive meal for St. Patrick’s Day featuring traditional Irish flavors.
Ingredients

- 2 lbs corned beef
- 1 cabbage, cut into wedges
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and quartered
- 1 onion, quartered
- 4 cups beef broth
- 1 tablespoon mustard seeds
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Place corned beef in a large pot.
- Add beef broth, mustard seeds, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add carrots, potatoes, and onion. Cook for 20 minutes.
- Add cabbage and cook for another 15 minutes.
- Remove meat and vegetables, slice, and serve.
Notes
- Use leftover corned beef for sandwiches.
- Adjust cooking time based on beef thickness.
- Serve with Irish soda bread.
