A festive dish for St. Patrick’s Day celebrations.
Ingredients

- 1 lb corned beef
- 1 cabbage, chopped
- 4 carrots, sliced
- 4 potatoes, cubed
- 1 onion, chopped
- 2 cups beef broth
- 1 tbsp mustard
- 1 tbsp peppercorns
Instructions
- Rinse corned beef under cold water.
- Place corned beef in a pot with beef broth, onion, and peppercorns.
- Bring to a boil and then simmer for 2-3 hours.
- Add potatoes and carrots to the pot.
- Simmer for another 30 minutes.
- Add cabbage and cook for an additional 15 minutes.
- Serve with mustard on the side.

- Use fresh ingredients for best flavor.
- Adjust cooking time based on the size of corned beef.
- Leftovers can be used in sandwiches.
