- 1 lb corned beef
- 1 cabbage, chopped
- 4 carrots, sliced
- 6 potatoes, quartered
- 1 onion, diced
- 4 cups beef broth
- 2 tsp mustard seeds
- 1 tsp black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in a large pot.
- Add beef broth, onion, mustard seeds, peppercorns, and bay leaves.
- Bring to a boil, then simmer for 2 hours.
- Add potatoes, carrots, and cabbage.
- Cook for an additional 30 minutes or until vegetables are tender.
- Slice the corned beef and serve with vegetables.
Notes
- This dish is best served with mustard.
- Leftovers can be stored in the refrigerator for up to 3 days.
