Description
A festive dish to celebrate St. Patrick’s Day.
Ingredients
Scale
- 2 pounds of corned beef
- 4 cups of water
- 1 tablespoon of pickling spice
- 4 carrots, chopped
- 4 potatoes, quartered
- 1 head of cabbage, cut into wedges
- Salt to taste
Instructions
- Place the corned beef in a pot.
- Add water and pickling spice.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Add carrots and potatoes; cook for another 30 minutes.
- Add cabbage and cook for an additional 15 minutes.
- Remove from heat and let rest for 10 minutes before slicing.
Notes
- Serve with mustard or horseradish.
- Leftovers can be used in sandwiches.
