Ingredients

- 2 cups of green cabbage, chopped
- 1 cup of carrots, shredded
- 1 pound of corned beef, cooked and sliced
- 4 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped cabbage and shredded carrots. Sauté for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the sliced corned beef, salt, pepper, and thyme.
- Reduce heat and simmer for 30 minutes.
- Serve hot and enjoy your St. Patrick’s Day meal.
