  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon fresh thyme, minced
  • 2 tablespoons olive oil
  • 2 cups beef broth

Instructions

  1. Remove the standing rib roast from the refrigerator and let it sit at room temperature for about 1 hour.
  2. Preheat your oven to 450°F (230°C).
  3. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Rub the olive oil all over the roast, then apply the seasoning mixture evenly to the entire surface of the meat.
  5. Place the roast bone-side down in a roasting pan.
  6. Roast in the preheated oven for 20 minutes to develop a crust.
  7. Reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired doneness (about 130°F for medium-rare, 140°F for medium). This usually takes around 1.5 to 2 hours.
  8. Remove the roast from the oven and let it rest for at least 20 minutes before carving.
  9. While the roast is resting, add the beef broth to the roasting pan, scraping up any browned bits from the bottom. Simmer over medium heat for 5-10 minutes to create a flavorful au jus.
  10. Slice the roast and serve with the au jus on the side.
