- 8 oz pasta (your choice)
- 1 lb flank steak
- 2 cups arugula
- 1/2 cup shaved Parmesan cheese
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 1 tsp garlic powder
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season flank steak with salt, pepper, and garlic powder.
- In a skillet over medium-high heat, sear the steak for about 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.
- Remove steak from the skillet and let it rest for 5 minutes before slicing it thinly against the grain.
- In a large bowl, combine cooked pasta, arugula, cherry tomatoes, red onion, and sliced steak.
- In a small bowl, whisk together olive oil and balsamic vinegar. Pour over the salad and toss to combine.
- Top with shaved Parmesan cheese and additional salt and pepper to taste.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
