Description

A hearty and refreshing steak pasta salad featuring arugula and shaved Parmesan cheese, perfect for a quick lunch or dinner.


Ingredients

  • 8 oz pasta (your choice)
  • 1 lb flank steak
  • 2 cups arugula
  • 1/2 cup shaved Parmesan cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season flank steak with salt, pepper, and garlic powder.
  3. In a skillet over medium-high heat, sear the steak for about 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.
  4. Remove steak from the skillet and let it rest for 5 minutes before slicing it thinly against the grain.
  5. In a large bowl, combine cooked pasta, arugula, cherry tomatoes, red onion, and sliced steak.
  6. In a small bowl, whisk together olive oil and balsamic vinegar. Pour over the salad and toss to combine.
  7. Top with shaved Parmesan cheese and additional salt and pepper to taste.
  8. Serve immediately or chill in the refrigerator for 30 minutes before serving.
