- 1 lb flank steak, thinly sliced
- 1 cup white rice, uncooked
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh cilantro, chopped (optional)
Instructions
- Cook rice according to package instructions, using chicken broth instead of water for extra flavor.
- Heat olive oil in a large skillet over medium-high heat.
- Add steak slices and season with cumin, paprika, salt, and pepper. Cook until browned, about 3-4 minutes per side. Remove and set aside.
- In the same skillet, sauté onion and bell pepper until softened, about 3 minutes. Add garlic and cook for 30 seconds.
- Return the steak to the skillet and mix well.
- Stir in the cooked rice and shredded cheese until fully combined and the cheese melts.
- Garnish with cilantro if desired and serve hot.
Notes
- For extra spice, add diced jalapeños.
- Use a mix of cheeses like Monterey Jack for more flavor.
- Leftovers store well in the fridge for up to 3 days.
