Ingredients

- 2 medium eggplants, cut into cubes
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1 tsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp water
- 2 green onions, sliced
- 1 tsp sesame seeds
Instructions
- Cut eggplants into cubes and toss with salt. Let sit for 15 minutes, then rinse and pat dry.
- Whisk soy sauce, honey, rice vinegar, and sesame oil in a bowl.
- Heat vegetable oil in a pan over medium heat. Add eggplant and cook until golden, about 5 minutes.
- Add garlic and ginger, stir for 1 minute.
- Pour sauce over eggplant and stir well.
- Mix cornstarch with water and add to the pan. Cook until sauce thickens.
- Garnish with green onions and sesame seeds.
- Serve hot with rice.
