Description

Ingredients

  • 4 salmon fillets
  • 1/4 cup miso paste
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups bok choy, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a small bowl, whisk together miso paste, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
  2. Preheat the oven to 400°F (200°C).
  3. Place salmon fillets on a lined baking sheet and brush generously with the miso mixture. Reserve some sauce for later.
  4. Bake salmon for 12-15 minutes, or until it flakes easily with a fork.
  5. While the salmon is baking, heat a large skillet over medium heat. Add chopped bok choy and sauté for 3-5 minutes until tender.
  6. Season bok choy with salt and pepper, and sprinkle with sesame seeds.
  7. Once the salmon is done, remove it from the oven and brush with the reserved miso sauce.
  8. Serve the sticky miso salmon over a bed of sesame bok choy, garnished with sliced green onions.

Notes

  • For extra flavor, marinate the salmon in the miso mixture for 30 minutes before baking.
