- 4 salmon fillets
- 1/4 cup miso paste
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups bok choy, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a small bowl, whisk together miso paste, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
- Preheat the oven to 400°F (200°C).
- Place salmon fillets on a lined baking sheet and brush generously with the miso mixture. Reserve some sauce for later.
- Bake salmon for 12-15 minutes, or until it flakes easily with a fork.
- While the salmon is baking, heat a large skillet over medium heat. Add chopped bok choy and sauté for 3-5 minutes until tender.
- Season bok choy with salt and pepper, and sprinkle with sesame seeds.
- Once the salmon is done, remove it from the oven and brush with the reserved miso sauce.
- Serve the sticky miso salmon over a bed of sesame bok choy, garnished with sliced green onions.
Notes
- For extra flavor, marinate the salmon in the miso mixture for 30 minutes before baking.
- Feel free to substitute bok choy with other leafy greens like spinach or kale.
