- 2 cups Whole milk
- 1 cup Heavy cream
- 3/4 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 4 large Egg yolks
- 4 ounces, finely chopped Bittersweet chocolate
Instructions
- In a medium saucepan, combine whole milk, heavy cream, and sugar over medium heat. Stir until the sugar is dissolved and the mixture is warm, but not boiling.
- In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.
- Slowly pour the warm milk mixture into the egg yolks while whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon (about 170°F).
- Remove from heat and stir in the vanilla extract.
- Let the mixture cool to room temperature, then chill in the refrigerator for at least 4 hours, preferably overnight.
- Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions.
- During the last few minutes of churning, slowly add the chopped bittersweet chocolate until well incorporated.
- Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
