Description

A creamy, decadent Italian gelato flavored with rich chocolate shavings. Perfect for a refreshing treat on a hot day!


Ingredients

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 3/4 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 4 large Egg yolks
  • 4 ounces, finely chopped Bittersweet chocolate

Instructions

  1. In a medium saucepan, combine whole milk, heavy cream, and sugar over medium heat. Stir until the sugar is dissolved and the mixture is warm, but not boiling.
  2. In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.
  3. Slowly pour the warm milk mixture into the egg yolks while whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon (about 170°F).
  5. Remove from heat and stir in the vanilla extract.
  6. Let the mixture cool to room temperature, then chill in the refrigerator for at least 4 hours, preferably overnight.
  7. Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  8. During the last few minutes of churning, slowly add the chopped bittersweet chocolate until well incorporated.
  9. Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
