- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 large eggs
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 cup strawberries
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the flour, baking soda, and salt; set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- In another bowl, mix the softened cream cheese and powdered sugar until smooth. Fold in the chopped strawberries.
- Scoop a tablespoon of cookie dough onto the prepared baking sheet, flatten slightly, and add a small spoonful of the cheesecake mixture on top.
- Cover the cheesecake mixture with another tablespoon of cookie dough, sealing the edges.
- Repeat with the remaining dough and filling.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For best results, chill the cookie dough for 30 minutes before baking.
- Feel free to use frozen strawberries if fresh ones are not available.
