Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream, plus extra for whipping
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup powdered sugar
  • 1 cup whipped cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round, then cut into 8 wedges.
  6. Place the wedges on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown.
  7. While the shortcakes are baking, prepare the strawberries. In a medium bowl, toss the sliced strawberries with powdered sugar and let them sit for about 15 minutes to release their juices.
  8. Once the shortcakes are cool, slice them in half horizontally.
  9. Layer the bottom half of the shortcake with strawberries and whipped cream, then place the top half back on and serve with extra strawberries and whipped cream on the side.

Notes

  • You can use store-bought whipped cream if you prefer.
  • Feel free to add a splash of lemon juice to the strawberries for extra flavor.
