- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 3 to 4 tablespoons ice water
- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch

- 1 large egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the ice water, one tablespoon at a time, until the dough holds together. Form into a disk, wrap in plastic, and refrigerate for at least one hour.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, toss the sliced strawberries with lemon juice, vanilla extract, sugar, and cornstarch. Let it sit for about 10 minutes.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to the prepared baking sheet.
- Spoon the strawberry mixture into the center of the dough, leaving about 2 inches of border. Fold the edges of the dough over the filling, pleating it as you go.
- Brush the dough with the beaten egg and sprinkle with additional sugar if desired.
- Bake for 30-35 minutes, or until the crust is golden brown and the strawberries are bubbling.
- Allow to cool slightly before serving with a scoop of vanilla ice cream.
