This Strawberry Mascarpone Cake is a delightful treat, layered with fresh strawberries and a creamy mascarpone filling, beautifully adorned with edible flowers for an elegant finish.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 ½ cups mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries, sliced
  • Edible flowers for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Gently fold the mascarpone cheese into the whipped cream until smooth and well combined.
  10. Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of the mascarpone mixture on top, followed by a layer of sliced strawberries.
  11. Place the second cake layer on top and spread the remaining mascarpone mixture over the top and sides of the cake.
  12. Decorate the top with additional sliced strawberries and arrange edible flowers for a beautiful presentation.
  13. Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For best results, use fresh, ripe strawberries.
  • Feel free to use other edible flowers like violets or pansies for decoration.
