Ingredients
Scale
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 ½ cups mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Fresh strawberries, sliced
- Edible flowers for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Gently fold the mascarpone cheese into the whipped cream until smooth and well combined.
- Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of the mascarpone mixture on top, followed by a layer of sliced strawberries.
- Place the second cake layer on top and spread the remaining mascarpone mixture over the top and sides of the cake.
- Decorate the top with additional sliced strawberries and arrange edible flowers for a beautiful presentation.
- Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
Notes
- For best results, use fresh, ripe strawberries.
- Feel free to use other edible flowers like violets or pansies for decoration.
- Store any leftovers in the refrigerator.
