Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup powdered sugar
  • 1 cup heavy whipping cream, for topping
  • 1 tablespoon powdered sugar, for topping
  • 1 teaspoon vanilla extract, for topping

Instructions

  1. Preheat your oven to 425°F (220°C). Grease and flour an 8-inch round cake pan.
  2. In a large bowl, combine flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and gently knead a few times until smooth.
  6. Roll out to about 1-inch thickness and cut into rounds using a biscuit cutter.
  7. Place the shortcakes on the prepared baking pan and bake for 15-20 minutes or until golden brown.
  8. Meanwhile, in a bowl, combine sliced strawberries with powdered sugar and let sit to release juices.
  9. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  10. To assemble, slice the shortcakes in half. Layer the bottom half with strawberries, then top with whipped cream, and place the other half on top.
  11. Serve immediately and enjoy your strawberry shortcake!
