Ingredients

  • 6 cups fresh spinach
  • 2 cups sliced strawberries
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp poppy seeds
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and dry the spinach thoroughly.
  2. Slice strawberries and red onion.
  3. Toast almonds lightly in a dry pan for 2 minutes.
  4. In a small bowl, whisk honey, vinegar, olive oil, poppy seeds, salt, and pepper.
  5. Combine spinach, strawberries, almonds, red onion, and feta in a large bowl.
  6. Drizzle dressing over the salad and toss gently.
  7. Serve immediately.
