- 6 cups fresh spinach
- 2 cups sliced strawberries
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 2 tbsp poppy seeds
- 1/4 cup honey
- 2 tbsp apple cider vinegar
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and dry the spinach thoroughly.
- Slice strawberries and red onion.
- Toast almonds lightly in a dry pan for 2 minutes.
- In a small bowl, whisk honey, vinegar, olive oil, poppy seeds, salt, and pepper.
- Combine spinach, strawberries, almonds, red onion, and feta in a large bowl.
- Drizzle dressing over the salad and toss gently.
- Serve immediately.
