A creamy and spicy dip inspired by street corn.
Ingredients

- 2 cups corn kernels
- 1 cup cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine corn, cream cheese, sour cream, and mayonnaise.
- Add cheddar cheese, cilantro, lime juice, chili powder, and salt. Mix well.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes until bubbly and golden.
- Serve warm with tortilla chips.
Notes
- Use fresh or frozen corn for the best flavor.
- Adjust spice level by adding more or less chili powder.
- Can be made a day in advance and baked before serving.
