Description

A flavorful and easy-to-make pasta salad inspired by Mexican street corn.


Ingredients

  • 8 oz pasta (elbow or fusilli)
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime, juiced
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely diced (optional)
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
  3. Add cooked pasta, corn, cotija cheese, cilantro, and jalapeño (if using). Toss well.
  4. Season with salt and pepper to taste.
  5. Chill for at least 30 minutes before serving.

Notes

  • Use grilled corn for extra flavor.
  • Substitute feta cheese if cotija is unavailable.
