Delicious and healthy stuffed bell peppers filled with quinoa and ground turkey, perfect for a nutritious meal.

- 4 large bell peppers (any color)
- 1 cup cooked quinoa
- 1 pound ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until translucent.
- Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the cooked quinoa, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and cook for an additional 5 minutes.
- Stuff each bell pepper with the quinoa and turkey mixture, pressing down to pack it in.
- Place the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes.
- If using cheese, remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- Feel free to customize the filling with your favorite vegetables or spices.
- You can use brown rice or another grain instead of quinoa if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
