- 4 salmon fillets
- 8 oz cream cheese, softened
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the cream cheese, chopped spinach, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
- Using a sharp knife, create a pocket in each salmon fillet by cutting horizontally, being careful not to cut all the way through.
- Stuff each salmon fillet with the cream cheese and spinach mixture, using toothpicks to secure the edges if necessary.
- Heat olive oil in a large oven-safe skillet over medium heat. Sear the stuffed salmon fillets for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
