  • 8 oz cream cheese, softened

  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the cream cheese, chopped spinach, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, create a pocket in each salmon fillet by cutting horizontally, being careful not to cut all the way through.
  4. Stuff each salmon fillet with the cream cheese and spinach mixture, using toothpicks to secure the edges if necessary.
  5. Heat olive oil in a large oven-safe skillet over medium heat. Sear the stuffed salmon fillets for about 3-4 minutes on each side until golden brown.
