Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1 bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced into thick rounds
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, combine chicken cubes and BBQ sauce. Marinate for at least 30 minutes or up to overnight in the refrigerator.
  2. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, bell pepper, onion, and zucchini onto the skewers, alternating between chicken and veggies.
  5. Brush the skewers with olive oil and season with salt and pepper.
