- 2 lbs chicken breast, skinless and boneless
- 1 cup diced bell peppers
- 1 cup diced zucchini
- 1 cup corn (fresh or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the diced bell peppers, zucchini, corn, and black beans on top of the chicken.
- Pour the salsa over the vegetables and chicken.
- Sprinkle cumin, chili powder, salt, and pepper over the top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked.
- Once cooked, shred the chicken with two forks and stir everything together.
- Serve warm, garnished with fresh cilantro and lime wedges.
Notes
- This meal can be served on its own, over rice, or in tortillas.
- Feel free to add other seasonal vegetables like squash or tomatoes.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
