Enjoy these light and easy summer meals made in your crockpot. Perfect for warm days when you want something delicious without the heat of the stove.


Ingredients

  • 2 lbs chicken breast, skinless and boneless
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the diced bell peppers, zucchini, corn, and black beans on top of the chicken.
  3. Pour the salsa over the vegetables and chicken.
  4. Sprinkle cumin, chili powder, salt, and pepper over the top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked.
  6. Once cooked, shred the chicken with two forks and stir everything together.
  7. Serve warm, garnished with fresh cilantro and lime wedges.

Notes

  • This meal can be served on its own, over rice, or in tortillas.
  • Feel free to add other seasonal vegetables like squash or tomatoes.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
