- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced (any color)
- 1/2 cup sweet corn (canned or frozen)
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, sweet corn, black olives, and red onion.
- Pour the Italian dressing over the pasta salad and toss to coat evenly.
- Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving.
- Serve chilled or at room temperature.
