Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and water (or broth). Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy and water is absorbed.
  2. Remove from heat and let it cool for a few minutes.
  3. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and feta cheese (if using).
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Add the cooked quinoa to the vegetable mixture and pour the dressing over the top. Toss to combine.
  6. Serve chilled or at room temperature.
