A light and healthy quinoa salad packed with fresh vegetables, herbs, and a zesty lemon dressing, perfect for summer meals.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water (or broth). Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy and water is absorbed.
- Remove from heat and let it cool for a few minutes.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and feta cheese (if using).
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooked quinoa to the vegetable mixture and pour the dressing over the top. Toss to combine.
- Serve chilled or at room temperature.
