- 1 cup cherry tomatoes, halved

- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, corn, black beans, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Divide the mixture into meal prep containers.
- Top each bowl with diced avocado before serving.
