  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, corn, red onion, and mozzarella balls.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, dried oregano, salt, and pepper.
