- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- In a bowl, combine olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until cooked through and juices run clear.
- Remove chicken from the grill and let it rest for 5 minutes before slicing.
- In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, avocado, and feta cheese.
- Top the salad with sliced grilled chicken and drizzle with balsamic vinaigrette. Toss gently to combine.
- Serve immediately.
