Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until cooked through and juices run clear.
  3. Remove chicken from the grill and let it rest for 5 minutes before slicing.
  4. In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, avocado, and feta cheese.
  5. Top the salad with sliced grilled chicken and drizzle with balsamic vinaigrette. Toss gently to combine.
