A refreshing and nutritious quinoa salad perfect for summer meals. Packed with vegetables and a zesty dressing, this dish is both healthy and delicious.

- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
- Remove from heat and let it cool to room temperature.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and pour the dressing over it. Toss to combine.
- Serve chilled or at room temperature.
Notes
- Feel free to add other summer vegetables or proteins like grilled chicken or chickpeas.
- This salad can be made a day in advance for easier meal prep.
