Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. Remove from heat and let it cool to room temperature.
  3. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Add the cooled quinoa to the vegetable mixture and pour the dressing over it. Toss to combine.
  6. Serve chilled or at room temperature.

Notes

  • Feel free to add other summer vegetables or proteins like grilled chicken or chickpeas.
  • This salad can be made a day in advance for easier meal prep.
