Ingredients

- 1 cup of watermelon, cubed
- 1 cup of cucumber, sliced
- 1 cup of cherry tomatoes, halved
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of fresh mint leaves, chopped
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine watermelon, cucumber, cherry tomatoes, and feta cheese.
- Add chopped mint leaves to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately or chill in the refrigerator for 30 minutes.
Notes
- This snack is best served fresh.
- You can substitute feta with avocado for a different flavor.
