A quick and delicious stir-fry with sweet chili sauce, tender chicken, and fresh vegetables.
Ingredients

- 2 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 tsp sesame oil
- 1/4 cup green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Heat vegetable oil in a large pan over medium-high heat.
- Add chicken and cook until browned, about 5 minutes.
- Add garlic and ginger, stir for 30 seconds.
- Toss in bell peppers, broccoli, and carrot. Stir-fry for 3-4 minutes.
- Pour sweet chili sauce and soy sauce over the mixture. Stir well.
- Cook for another 2 minutes until sauce thickens slightly.
- Drizzle with sesame oil and garnish with green onions and sesame seeds.
- Serve hot over rice or noodles.
Notes
- For extra heat, add red pepper flakes.
- Substitute chicken with tofu for a vegetarian option.
- Use low-sodium soy sauce if preferred.
