Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/4 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1/4 cup green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Heat vegetable oil in a large pan over medium-high heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add garlic and ginger, stir for 30 seconds.
  4. Toss in bell peppers, broccoli, and carrot. Stir-fry for 3-4 minutes.
  5. Pour sweet chili sauce and soy sauce over the mixture. Stir well.
  6. Cook for another 2 minutes until sauce thickens slightly.
  7. Drizzle with sesame oil and garnish with green onions and sesame seeds.
  8. Serve hot over rice or noodles.

Notes

  • For extra heat, add red pepper flakes.
  • Substitute chicken with tofu for a vegetarian option.
  • Use low-sodium soy sauce if preferred.
