- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 8 small tortillas
- 1/2 cup shredded lettuce
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1/4 cup salsa
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, smoked paprika, cumin, chili powder, and salt.
- Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes until tender.
- Warm the tortillas in a skillet or microwave.
- Assemble the tacos by filling each tortilla with roasted sweet potatoes, black beans, lettuce, cilantro, red onion, and salsa.
- Serve immediately.
