Ingredients

  • 2 medium sweet potatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 teaspoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. Toss the sweet potatoes with olive oil, cumin, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet.
  5. Bake for 25-30 minutes until tender.
  6. In a bowl, combine black beans, corn, and red bell pepper.
  7. Once sweet potatoes are done, mix them with the bean mixture.
  8. Portion into meal prep containers.
