A healthy and convenient sweet potato meal prep recipe.
Ingredients

- 2 medium sweet potatoes
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 teaspoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- Toss the sweet potatoes with olive oil, cumin, salt, and pepper.
- Spread sweet potatoes on a baking sheet.
- Bake for 25-30 minutes until tender.
- In a bowl, combine black beans, corn, and red bell pepper.
- Once sweet potatoes are done, mix them with the bean mixture.
- Portion into meal prep containers.
Notes
- Store in the refrigerator for up to 5 days.
- Reheat in the microwave before serving.
- Add avocado or cheese for extra flavor.
